Moroccan Spiced Sweet Potatoes
Ingredients
6 large Roma tomatoes. I used a can of diced tomatos
2 1/2-3 pounds sweet potatoes, peeled and diced into 1-inch pieces ( I microwaved these until soft, cooled, peeled, and then diced)
3 tablespoons butter
2 cloves garlic, minced
1 medium onion, diced
2 teaspoons sweet paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon sugar
Juice of 1/2 lime
Cilantro for garnish
Directions
Melt butter. Add garlic, onion and spices and reduce heat to medium low. Saute 5-7 minutes until onion is crisp-tender and coated with spices. Add tomatos and sugar and cook 3-4 minutes.
Add diced sweet potatos to contents of skillet over potatoes and toss. Garnish with cilantro.
If desired, squeeze 1/2 lime over dish just before serving.
