Since it will just be me and the animals, I am going all out and frying up some Chicken Gizzards, Mac & Cheese and fresh broccoli......

People think I am weird for eating the Chicken Gizzards, but Mom and I had them for our Christmas dinner alone with the Mac & Cheese and fried Okra....YUMMY

Default Modified Tex-Mex Chili

Serves: 6

Prep: 20 mins.
Cook Time: 30 mins.

Ingredients:

1 tablespoon vegetable oil
1 medium onion, chopped
3 garlic cloves, minced
1 1/4 lbs lean ground turkey
1 tablespoon chili powder
1 tablespoon ground cumin
3/4 teaspoon salt
2 (15 ounce) cans stewed tomatoes, undrained
1 (16 ounce) can kidney beans, drained
1 green pepper, diced
3/4 cup salsa

GARNISH

grated cheddar cheese
sour cream
chopped tomatoes or cilantro

Directions:

Heat oil in a large saucepan over medium heat. Add onion and garlic; cook 5 minutes, stirring occasionally.

Crumble turkey into saucepan; sprinkle with chili powder, cumin and salt. Cook 5 minutes, stirring occasionally.

Add tomatoes, beans, bell pepper and salsa. Bring to a boil over high heat. Reduce heat; simmer uncovered 10 minutes, stirring occasionally.

Serve hot with garnishes of your choice.


Per serving: 292 calories, 23.1 g protein, 26.9 g carbohydrates, 6.5 g fiber, 11.4 g fat (2.6 g saturated fat), 74 mg cholesterol, 1151 mg sodium.

nothing on my menu. the patriots didnt make it so i doubt i will watch. we'll see. depends on if anyone posts some yummy recipes in this thread.
