Sorry for this long wait, but here we go the famous chocolate cake that Gilles love.

Ingredient:
5 eggs
1 1/2 cups of semi sweet chocolate chip
heavy whipping cream

Start by putting your oven at 375, separate the egg, put the yoke on a big bowl and the white on another bowl.
Mix the white until a hard consistent.
Melt chocolate chip with one cup of heavy whipping cream, low fire.
Mix the chocolate chip with the yoke and then include the white hard on it, mix slowly until you have a nice mousse.
Butter and flour a cooking pan, which is just a little bit of flour to be able to cover all the area of the pan so the cake will not stick.
Cook for at least 30 min and then put a nife in the middle, if the nife come out with liquid, make it cook longer and if the nife come out with tiny pieces of cake in it, remove from the oven and try to get the cake out right away, the cake will stick easier to the pan cause of the flourless, but if you take the cake out of the cooking pan right after the cooking, it will come perfect.
Gilles love to eat the cake hot with some heavy whipping cream on top, the hot cake with the cold cream make an amazing touch.

my first attempt at this resulted in a grainy texture because I over whipped the whites.

I read Julia Child's cookbook on whipping egg whites and folding and the result was perfection

whip egg whites one minute, then add 1/4+ tsp. cream of tarter and a pinch of salt. Whip another minute and check for peaks. Stop whipping while egg whites are still shiny. Dull, over whipped whites cause grainy texture in cake.


Then add 1/4 of whipped egg whites to choc mixture and gently stir in. Pour rest of egg whites on top of choc and fold in gently for 1 min. NO longer and they don't have to be totally mixed in.

Julie and Julia was a fun movie...
